At cheesegeek as far as Cheddar-style cheeses go, Hafod pretty much conquers all. It just has everything, but doesn't overstep the mark at any stage. First of all, it is relatively unique in that it is made from the milk of Ayrshire cows, a deviation from the more common Holstein/Freisians. The recipe is derived from a Poacher, and it is that Alpine influence that brings so much to the table. Rather than a really tangy, dry crumbly cheddar, Hafod is more nutty and retains a lovely suppleness even after 1yr plus on the maturing shelves. It is intensely buttery, in a melted butter on toast kind of way. When you eat it, you really feel like you are treating yourself. And I think what you really do get from a cheese like Hafod, or Poacher for that matter, is such an epically smooth finish. It just chills out in your mouth for a little bit, then dissipates just when it should...like leaving a party at just the right moment. An absolute must for any lovers of hard cheese.

During checkout, you will be able to select your preferred delivery date. This is great if you're buying as a gift or are organising your cheese in advance. The cheese will be packed in chilled, insulated boxes (that look great!) and will always be prepared on the day it is dispatched. A few other handy pointers:

- We use DHL nationwide and Packfleet within the M25

- Please use the delivery date you have selected as a guide rather than a guarantee.

- Your cheese will arrive in the best condition. It will have been prepared freshly and will not have been with our courier beyond our maximum of 48hrs

- You will receive delivery notifications for when your order is dispatched that mean you can track when it’s in transit

If you aren’t in for your delivery, this won’t matter. Our couriers will leave your cheese in you designated safe place in our climate controlled packaging.

Holden Farm Dairy is based on Bwlchwernen Fawr Farm, West Wales and has been certified organic since 1973, making it the longest-standing registered organic dairy farm in Wales. Owner, Patrick Holden, and wife Becky now run the farm producing Hafod from the raw milk of their Ayrshire dairy herd.
