A journey that highlights the community of cheesemakers in the UK, the Spence family had to set up again from scratch after a premises move. In the space of 3 weeks they managed to set up micro dairy (and when we say micro, it's only 6 by 3 metres) with expertise and equipment from other cheesemakers. Ben & Sam have refined their Wensleydale recipe and make Old Roan in small batches using milk from a local herd of Holstein and Ayrshire cows. A testament to the cheesemaking community.
